Sacher Cake with cherries


Hi Dears!
As I hinted before on our FB page, we have cake anarchy here... This is the third cake in a row, and let me tell you a secret... There will be a 4th coming soon! :D 
Yes, there are way too many celebrations in my family during March... 
4 name days, 3 birthdays... 
This special Sacher Cake was my lovely Grandfather's. He doesn't like creamy cakes, he said he loved the cakes which he could bite  in the middle. So that's why Sacher cake with it's chocolaty sponge and jam in the middle is perfect for the occasion. And to enhance the flavors, I put cherries in the sponge, to make it a little bit lighter. Plus as a decoration on the top I used dried apricots, which were soaked previously in rum & milk. Yum! And of course I am mastering the Technic of making marzipan flowers, so this cake has a lot of them to be pretty. :D

Now let's see the preparation for this cake...
Ingredients:
  • 4 tbsp of milk + 1 tbsp of rum (flavor) + dried apricots   for the decoration
  • 6 egg whites
  • 2 tbsp of vanilla sugar
  • 6 egg yolks
  • 200 g = 4/5 cup  of sugar
  • 100 g = 2/5 cup of melted margarine/butter
  • 2 bars of dark chocolate (200g) with 2 tbsp of milk (melted)
  • 250 g = 1 cup of flour
  • 1 tbsp of baking powder
  • 2 dl = 4/5 cup of milk
  • 0,5 dl = 1/5 cup of oil
  • 1 tbsp of cocoa
  • 2 tbsp of rum flavor
  • jam (peach, or blueberries)
  • cherries (seeded)
  • 1 bar of dark chocolate
  • marzipan
Preparation:


1. Soak the dried apricots in rum & milk.
2. Beat up the eggs, and add the vanilla sugar to the egg whites, and whisk it till You get a though foam.

3. Mix the yolks with sugar and with the melted margarine/butter.
4. Melt 2 bars of dark chocolate with adding 2 tbsp of milk to it. (You can do it in the microwave for about 2 minutes on 300W, then stir it with a little fork, or use two pots. Boil water in one of them and put the other pot on it with the chocolate, and stir it until it gets melted.) 
5.Add it to the mixture, mix it, than you can add all the other ingredients (flour, baking powder, milk, oil, cocoa, and the rum flavor) Then mix them well. 

6. Lastly, gently stir the foam to the mixture with a spatula.

7. Lubricate a baking mold with margarine, and sprinkle flour on it, then pour the mixture in the mold.
8. Sprinkle a little flour onto the cherries (this will guarantee that they won't all sit down to the bottom of the cake) Then put them into the mixture. 


9. Preheat the oven for about 200 degree Celsius, than bake the cake for about 40-45 minutes.

10. Cut the cake in the middle, and lubricate jam in it, then put back the top of the cake.

11. Melt another dark chocolate bar, and lubricate the top and the side of the cake.
12. Place the dried apricots on it, then if You wish You can make some marzipan roses to the middle. 





Wait till the chocolate dries, then You can serve it, or You can leave it in the fridge for a night, to get the most of the flavors.
