Pink sponge rolls

Hi Dears!
As I promised yesterday on our FB page, I have brought today a sponge roll recipe!
I'm not usually a pink wearing person, but in the summer even that can change...  This is a happy color, so I thought that a dessert  like this would be cute.
The cream and the sponge are so light, they melt in your mouth,
I made the rolls for my friends, as we were having a pic-nic in the City Park, which is by the way one of the most beautiful place in Budapest, with a castle, a lake and with a nice park. After that we headed to the Scorpions concert , so a bit rock was a nice contrast to this pink dessert. :D

Ingredients:
  • 4 eggs (yolks and whites separated)
  • 2 tbsp of Cologrin sweetener (or 6 tbsp of sugar)
  • 2 tbsp of vanilla sugar
  • 9 tbsp of water
  • 8 tbsp of flour
  • 1 tbsp of baking powder
  • -----
  • 310 g = 1 cup of strawberry yogurt
  • 1 dl = 2/5 cup of milk
  • 2 tbsp of vanilla sugar
  • 1 package of instant pudding powder(strawberry or punch)

Preparation:

1. Beat up the eggs, and add the vanilla sugar to the egg whites, and mix it until it becomes a tough  foam.

2. Mix the yolks with the sweetener, add the flour, the baking powder and the water to it, mix them well, then gently stir the egg foam into it.

3. Put baking sheets on 2 big baking trays, and sprinkle them with flour a bit.

4. Spoon the pastry onto them, and smooth their surface with a spatula.

5. Bake them in a preheated oven for about 12-15 minutes on 200 degree Celsius.

6. Until then, mix the yogurt with the milk, the vanilla sugar , and with the pudding powder. (It was a non-cooking pudding powder)

7. When the sponges are ready, put wet cloths on them, and roll them up.

8. After some minutes, roll them out, and take off the baking sheets.

9. Fill them with the pink cream, and roll them up again.

10. Slice it up, and you can serve them! :)

Enjoy!
